This intimate fine dining restaurant is literally underground — accessed by a graceful wooden spiral staircase — and offers a completely different atmosphere from the lively, family-friendly energy upstairs. Here, the experience is refined, intimate, and deeply rooted in the spirit of the ranch.

“Under the Hitch” was designed as a sophisticated yet still authentically Texan fine dining destination. The space features rich wood paneling, exposed timber beams, stone walls, and soft, warm lighting that creates a cozy, cellar-like ambiance with unmistakable ranch elegance.

Under the Hitch is currently in the planning phase and will open alongside Phase I of the ranch (targeted for late 2026 / early 2027). When it does, it will serve as both a beautiful dining destination and a meaningful way to support our rescue mission.
